Appetizer: Pesto Tortellini Kabobs

New Years is quickly approaching and if you’re anything like me, my body is missing my normal eating/drinking patterns and is ready for a little R&R (rest and relaxation!). That’s why for New Year’s Eve, we are looking forward to spending quality time at home together, doing some appetizers and no formal sit down meals. This helps us feel like we can listen to our body throughout the day and eat as we please.

So if you’re also feeling that way, I’ve got a great appetizer recipe for you! Oh, it’s incredibly simple, delicious and modifiable too. I bring you…pesto tortellini kabobs!

Recipe is below – but seriously all you need is noodles (tortellini or you could do plain noodles too!), pesto, black olives, and sun dried tomatoes. Four ingredients plus kabob sticks or toothpicks for mini kabobs.

Hubby is 6 foot 7 inches so it’s easier to get cool bird’s eye view of my cooking!
