Cocoa Ginger Energy Bites

Back again with another energy bite recipe! These are probably my favorite to date and they are flavorful with just enough bite from the ginger. These are a great thing to throw in your lunch bag for a snack during the day or something you can eat on your way to work as well.

I also prepped a lot of these when I was pregnant with Lincoln (he’s 20 months now!) because I knew how hand it would be to get a nutritious bite in whenever I could. I also breastfed him for six months and these were my favorite middle of the night snack along with a cheese stick and pickles. Weird, I know.

Let’s get you in the kitchen with this recipe though!

Cocoa Ginger Energy Bites

Course Snack
Keyword energy bite, simple, snack

Ingredients

  • 1/3 cup crystallized ginger
  • 1/4 cup chocolate chips
  • 1/3 cup peanut butter (or almond butter – or any nut butter!)
  • 1 cup oats (rolled, quick, or steel cut)
  • 1/3 cup flax meal
  • 3 tbsp cocoa powder
  • 1/3 cup honey

Instructions

  1. Add all ingredients to a food processor and pulse until finely ground and mixed together.

  2. Roll into 12-15 energy bites and enjoy from the fridge or freezer for later.

Cocoa Powder: If you don’t use a lot of this ingredient try adding a few spoonfuls to your next batch of red (tomato based) chili or spaghetti sauce.

I hope you’ll give these a try! This is a great recipe to make with kids if you’re at home with them and need an activity. One, because it’s mostly measure (or estimate) and pour. Two, lots of kids love getting involved in the cooking and may try new foods as a result of it.
