
Creamy Shrimp Curry – Guest RD!
Have you every tried curry before? If not, this recipe is for you! The color alone makes me swoon and the taste is incredible. I did not make this recipe, it’s by my friend Safiyya Suleman, RDN. I reached out to several RDs for a recipe round up post that you can find HERE and Safiyya is one of the RDNs I chatted with about this. She came up and shared this recipe with me and I’m honored to share it here.

Creamy Shrimp Curry
Ingredients
Gravy
- 1 onion, finely chopped
- 2 tsp vegetable oil to braise onion
- 1/2 tsp mustard seeds
- 1 tsp crushed garlic
- 1 tsp Himalayan salt
- 1 1/2 tsp cajun spice
- 1 tsp coriander powder
- 1 tsp cumin powder
- 1 tsp red chili powder
- 1/2 tsp turmeric powder
- 1 tsp garam masala
- 1 tbsp lemon juice
- 1/2 tin tomato puree
- 1 tin coconut cream
Shrimp
- 1 pound shrimp
- 3 tbsp butter
- 1/2 tsp garlic powder
Instructions

Braise onion and mustard seed in vegetable oil till onions turn soft.

Add garlic and braise for 2 mins.

Add tin tomato, spices and lemon juice. Cook for 5 mins. Add in a little water if mixture dries up.

Add in coconut cream and simmer for 5 mins

In a separate stir fry pan, melt butter then add shrimp.

Sprinkle garlic powder over shrimp. Cook until done.

Serve gravy over the shrimp and enjoy
