Dragon Pork Stuffed Squash

Tis’ the season for all things squash right? I don’t know about you but I am a huge fan of it! Here’s the thing, squash is nutritionally full. It has fiber, vitamin C, Vitamin b6, magnesium, potassium, and yes carbohydrates. Carbohydrates are the preferred and primary source of fuel for the body – yes, you need them, 

Because of media and people who have a lot of influence without a lot of knowledge, we’ve grown to fear carbs as a society and “carby” vegetables like squash and potatoes. So if you’re asking yourself, “wait, she’s saying squash and potatoes aren’t bad for me?” One, you’re in the right kitchen here and two, pull up a chair!

Twelve Ingredients, One Awesome Dish!

I wanted to make something for you in the kitchen that’s simple but effective. So many recipes come with lots of steps, equipment, and ingredients which can make it an instant turn off. This recipe has twelve ingredients and the squash only requires you to plop it into a slow cooker. You don’t need to stab it with a knife or attempt to cut it in half fearing the knife will slice your fingers. Plop and done!

Dragon Pork Stuffed Squash

Spicy! You can cut the sriracha out to help decrease/eliminate the spice

Ingredients

  • 2 whole acorn squash *for a family of four, each will get one half stuffed with the mixture
  • 4 tbsp butter, divided
  • 1 egg
  • 2 tbsp brown sugar
  • 2 tbsp soy sauce
  • 1-2 tbsp sriracha sauce Eliminate if you don't like spicy!
  • cilantro as a topping if you like it
  • 2 green onions, sliced
  • 1 white onion, diced
  • 1 bell pepper, diced finely
  • 1 jalapeno, diced chop whole for extra spice or omit the pulp and seeds
  • 1 lb ground turkey or lean beef

Instructions

  1. Do this in the morning! The squash needs to cook and the easiest way to do it is to plop them in a crockpot whole without water. Cook on low for 3-4 hours or high for 2-3. Once cool, cut in half, scoop out the seeds.

    Alternatively, you can cut the squash in half when raw, scoop out the seeds, and cook in your air fryer (open side down) at 325 for 20 minutes.

  2. Sautee your meat in a pan with 2 tbsp of butter

  3. Add your white onion and bell pepper and cook for 3-4 minutes until fragrant

  4. Mix together the sugar, soy sauce, sriracha, and green onion.

  5. Pour the sauce over the mixture and continue cooking until well mixed

  6. Crack an egg in the pan and mix into the entire mixture.

  7. Once your squash is ready, cut slices into each half and put 1/2-1 tbsp of butter in each half

  8. Stuff each squash with equal parts of the mixture and top with cilantro if desired.

  9. Serve immediately!

I did notice try this recipe without adding butter to the squash but I think it’s helpful in the flavor department. Just like squash, butter isn’t bad for you! Eating a tub of butter of day is probably going to give you diarrhea but you don’t need to fear adding it to your food.
