One Measuring Cup Energy Bites

Are you a fan of energy bites? I am! They are easy to whip up, they are cheap, versatile and freeze nicely too. Recently, I whipped up a quick batch for my sister who’s due with her first baby any day now. I found that when I had Lincoln, these were a convenient and easy way for me to eat with one hand or to grab in the middle of the night when I need a snack during breastfeeding.

What can you add to them?

Anything you like! Their versatility is what makes them so great. I almost always throw in oats and some kind of nut butter but from there your options are endless. You can throw in flax meal or hemp hearts for some added healthy fats. Some chocolate chips or yogurt covered raisins for sweetness. Or maybe you like tangy and you do nuts and barbecue sauce…okay I’m not sure about that last one. I’ll experiment and get back to you on that. 😉

Do you eat 1? 2? 3?

I typically eat one or two but if you know me then you know I recommend at least two food groups for a snack. It’s more satisfying and typically a better way to balance your blood sugar. I love eating these with some Greek yogurt on the side or with a crunchy apple.

One thing to keep in mind is that they’re small, so it can be easy to pop back a few of them without knowing if you’re satisfied or full yet. Start with one or two and enjoy them with something else like I listed above. Check in with your body afterwards to see if you’re full or not. It can take a little while for your brain and stomach to connect so that’s why I like pairing food groups and giving myself a moment to check in.

Do you recommend checking in with your hunger/fullness for every meal and snack?

I do not! I think it’s great to do it once in a while but it’s not feasible to check in before, during, and after every eating experience. I try to do it when I sense I’m in a rush. For example, I was quite emotional one morning and I had to go grocery shopping. I bought a donut because 1) I love them and 2) I knew it would bring me a moment of joy in a bad morning. I took some deep breaths and waited until I got home to be in a calmer environment to eat the donut. I paired it with some fruit and moved one feeling satisfied and satiated!

This is a skill many of us have lost over time, so please don’t try to do it “perfectly” there is no such thing! Ready for the recipe? Here it is!

One Measuring Cup Energy Bites

Make delicious energy bites using one measuring cup the whole time.

Course Snack

Ingredients

  • 1 cup oats, uncooked
  • 1/3 cup dark chocolate chips
  • 2/3 cup shredded coconut, sweetened
  • 1/3 cup sliced almonds
  • 1/3 cup peanut butter
  • 1/3 cup flax meal
  • 1/3 cup maple syrup

Instructions

  1. Grab your 1/3 cup measuring cup and start with your dry ingredients. Add them all to a food processor.

  2. Next add your peanut butter and use a rubber spatula to get it all out.

  3. Last to be added is the maple syrup! Pulse or "pureed" the mixture using your food processor until it's well blended.

  4. Take about one heaping tablespoon of mixture and roll into balls/bites. Yields approximately 12-15 depending on size.

  5. Freeze for up to a month or leave in the fridge for 7-10 days.

ANYone! They make a great grab-and-go snack if you’re really busy and need quick things to grab or to eat in the car. They’re wonderful for new moms healing after birth and needing quick energy dense snacks. They delicious post workouts crumbled over vanilla Greek yogurt. Or can add a sweet bite to any packed lunch.
