[Overnight] Eggnog Chia Seed Pudding

If you’re like me you are a FAN of eggnog. I absolutely love it and I’m so sad that I spent a period of my life restricting it because I was worried about the fat and calories. Now, if I want some I enjoy it! This season in particular, I’ve been experimenting with it in my cooking and baking so I thought I’d share!

[Overnight] Eggnog Chia Seed Pudding

Course Breakfast, Snack


  • 1 cup eggnog use any kind you prefer
  • 2 tbsp chia seeds
  • 1/2 cup oats (uncooked) any kind
  • 1 tsp ground cinnamon


  1. Mix all ingredients together in a jar, cup, plastic container or coffee mug! Cover and refrigerate over night. Enjoy!

What’s the deal with chia seeds?

Chia seeds are itty-bitty ways to add quality fats and fiber into your meals. They do need liquid in order to be better digested! If you’ve never had them, they swell up about three times their sizes and become a bit jelly like. Now, if you’re not into two full tablespoons for this recipe, use more oats and sprinkle just a few in. It’s a simple and effective way to make your morning more nutritious.

Before you ask, “I never eat breakfast so why would I start?” Let me try to convince you otherwise. Your body fasts while you’re sleeping and your metabolism (I think of it like a bonfire) is hot coals waiting for fuel in the morning. Starving the fire and denying it fuel causes the coals to continue burning but more slowly. You may get aggressively hungry later on or even find yourself overeating or struggling at night time with eating because that fire is begging for fuel.

Eating a breakfast is also really important for blood sugar balance and management. We all hear about and know that blood sugar management is important. Starting your day with this recipe which has a blend of carbohydrates, fat, and a little protein too will provide energy while balancing blood sugar to start your day.

Don’t like eggnog?

That’s okay! While I love it, it’s not for everyone. You certainly can sub in any milk you prefer but for flavor purposes, you may need some extra add ins like fruit, nuts, maple syrup, more seasonings or seeds.
