I was loving the blip of warmer weather in early November! We spent a large part of the warm spell raking leaves (hello, back muscles I missed you) and being outside with Lincoln. Not only is the fresh air so good for him, but it’s beneficial for us as well.
Throughout the pandemic we certainly have been inside more and going places less. This has decreased our overall movement, anyone else? Steve and I have made it a point to incorporate walks, beach walks, hikes, or even just sitting outside and playing in the grass with our little man. It really does help boost our moods!
Know what else helps? Animal crackers! My mom was going to Sam’s club and she asked if we needed anything. I mentioned animal crackers forgetting that anything from Sam’s club comes in the biggest container ever – i.e we just got five pounds of animal crackers. I also got a bag of my favorite kettle corn, Boom Chicka Pop, and it’s almost the length of my leg – crazy! When these behemoth food bags/bins came home I got to thinking…what kind of a dip could I make for those animal crackers?
I grabbed a can of pumpkin, something we all might have in the pantry right now, and used half of it for this dip and used the other half for Lincoln’s meals. Canned pumpkin is fantastic for babies as it is a pureed, ready to go, and low in sodium (especially for being canned) vegetable.
I wanted to use things on that I already had on hand so I mixed in cream cheese, maple extract, and peanut butter. It is delicious with those animal crackers and also on its own. If you want to add in a little more sweetness I would add two tablespoons of brown sugar.
Pumpkin Cream Cheese Dip
Low sugar dip for fruit, graham crackers, teddy grahams, or more!
- 1 cup pureed pumpkin
- 1/2 block cream cheese
- 1/4 cup peanut butter
- 1/2 tsp maple extract
- 2 tbsp brown sugar optional
Blend all ingredients in a food processor or with an immersion blender
Simple as that! You could eat this dip with the animal crackers, apple slices, pretzels, or with a spoon. What would you use?
