Pumpkin Maple Energy Bites

Be honest, did the name draw you in? Yes, they are fabulously delicious and yes, you can whip them up in about 10 minutes.

That means this recipe has everything I need. It’s easy, full of nutrients, can be an easy breakfast or grab-and-go snack, and tastes like Autumn!

Pumpkin Maple Energy Bites

Course Breakfast, Snack
Keyword energy bite, maple, pumpkin


  • 1.5 cups Quick oats (or any kind of oats)
  • 8-10 Medjool dates I bought pitted but you can buy regular and take the pits out fairly easily
  • 1/2 cup Pumpkin puree not pumpkin pie filling 😉
  • 1/4 cup Nut butter
  • 1 tbsp Maple syrup bonus points if it's a locally made syrup
  • 1 tbsp Ground flax meal meal is easier to digest than flax seeds
  • 2 tsp Pumpkin pie spice
  • 1 tsp Maple extract


  1. Put all ingredients into the food processor. If you want the dates well mixed in, you may want to chop them into smaller pieces ahead of time.

  2. Puree/mix until it forms a dough

  3. Put in the fridge for approximately 10 minutes

  4. Remove and start rolling into bites!

Recipe Notes

These bites are good in the fridge for seven to ten days or in the freezer for three months. Optional additional add ins could be pumpkin seeds, chocolate chips, chia seeds, or craisins.

See? It’s pretty darn easy and oh so delicious. These are an excellent food to make with your kids if you’re getting them move involved in the kitchen. Let them practice measuring, scoop and even chopping!
