Shaved Asparagus & Fennel Salad with Orange Balsamic Vinaigrette – Guest RD

Shaved Asparagus & Fennel Salad with Orange Balsamic Vinagrette

  • 1 bunch asparagus, bottoms trimmed, thinly siced
  • 1 bulb fennel, core removed, shaved (save fronds)
  • 1 orange for zest and juice
  • 1 oz balsamic vinegar
  • 6 oz Extra virgin olive oil
  • 1 tsp salt
  • 1 orange segmented


  1. In a mixing bowl, combine thinly sliced asparagus and shaved fennel. In a jar, combine orange zest, orange juice, balsamic vinegar, EVOO, and salt. Secure the lid on the jar, and shake well to combine. Drizzle 2oz of vinaigrette around the inner sides of the mixing bowl. Using tongs, gently fold the veggies into the dressed sides. (This will help yo evenly cost them without making them soggy). Finish the salad with fresh orange segments and fennel fronds
