Let's be Insta-Friends

So my son is turning one year Old next Sunday… A So my son is turning one year Old next Sunday… And it’s got me thinking an awful lot about my postpartum journey. I honestly thought it would be done three months or so after he was born. I was super wrong about that.

sure, a good amount of healing happens in those first three months but the challenges and obstacles have continued to pop up as well. When I think about being pregnant I reflect on that whole 10 month period of time and then I think... not only did I have a baby but then I was able to feed him for six months from myself. I know that I am lucky for this and I also know that it was really hard work.

I would be lying to you if I didn’t have the thoughts about getting my body back... but I really questioned where this thought came from? Is it a fact? Is it a thought? Is it an accumulation of societies pressures they put on women? When I really think about the core of that thought, I know that my body will never quite be the same and that is OK. I have stretch marks and I love them even if I didn’t at first. I am not saying that my body image is always stellar, I have bad days too. But this journey has truly helped me honor and respect my body here now and to move forward with it instead of fighting against it.

Please know if you are somebody trying to conceive or going through loss I see you but won’t try to pretend like I understand exactly how that feels. All I can say is that this last year has been challenging and so beautiful at the same time. I don’t think I will ever not be in a postpartum journey it’s just going to keep evolving from here on out.

Happy Saturday friends! I got to team up with my d Happy Saturday friends! I got to team up with my dad and develop a recipe for him using a game bird called a Chukar. Ever had it? It tasted a lot like chicken which you can sub in if you like.

Recipe is a Sweet and Sassy Chukar with a delightful assortment of vegetables and fruit served over wheat berries.

If you’ve never had Egglife wraps essential they are tortillas made with egg whites and a few other simple ingredients. While in my home they won’t replace a whole wheat tortilla, they do add a great layer of added protein and flavor! That’s why I used them to recreate my TB favorite, the Cheesy Gordita Crunch! 🌮

These were made in about twenty minutes total so not only did they not take long but they tasted great and I didn’t have to go through drive through to get them. 🙌🏻 That’s a win in my book!

I filmed a cooking video with my dad @thehuntingdogpodcast today and I surprised him with some quail eggs. We put them in the water (before boiling), brought the eggs to a boil while stirring them and boiled for 3 minutes. Submerge them in an ice bath, peel and enjoy!

Telling yourself how to burn off candy robs you of the ability to enjoy that candy. It only creates a restrictive mindset which creates a drive for the food that you’re restricting...only too often to result in guilt, shame and frustration that you are something you didn’t “need.” 

Food is not just about eating for our body’s needs. It’s about desires, pleasures, respect, culture, traditions, nostalgia...and I know that’s hard to grasp because society makes it sound like if you had will power you wouldn’t struggle with x, y, or z. 

If society changed the narrative that’d be great but I don’t see that happening anytime soon so I’ll be over here telling you, it’s healthier to enjoy the candy if you’d like to than to tell yourself you’re not allowed only to potentially binge later and feel worse. 

So this Easter, tell me what Easter candy you’ll be enjoying without thinking about burning it off with exercise?🐣
Roasted Verde Veggie Enchiladas...Need I say more? Roasted Verde Veggie Enchiladas...Need I say more? 

If you've been here a while, then you know I love sharing my #aldifinds & favorites every week. Hey, @aldiusa let's work together shall we?? :P 

One staple I found a while back is their roasted verde salsa which is slightly spicy and slightly sweet (though there is no added sugar). I think it is a combination of the garlic, lime juice, peppers, etc that I just love! So I started buying it weekly because I was afraid it was going to be a product at Aldi that would come and go. 

Now we have eight jars of this salsa and Steve has reminded me we probably do not need to buy it weekly ;) so if anyone really wants a jar maybe I can mail you some hehe. If you don't have an Aldi near you, you can make a substitute for the salsa and I've given some suggestions in the blog post. 

I topped these enchiladas with some fresh cilantro, avocado and plain Greek yogurt. I also added some plain @rightrice on the side too! What would you top them with?
