Turkey Tenderloin Stuffing

Are you cooking for one this holiday or need an easy side dish? This one has your name(s) on it! Albeit not my best photo but it is mouth watering good!

If you’re needing a side dish, don’t add the Turkey 🍗 tenderloin but do add a mix of sage, garlic powder, and rosemary (a half tsp each) or if you’re needing a delicious Turkey and side meal all in one, you’ve got it right here. This is also a great dish to make as a side to have for the weekend after Thanksgiving if you need something to go with turkey leftovers.

Crockpot Turkey Tenderloin & Rice

A comforting and simple dish to throw together and enjoy all week

Course dinner

Ingredients

  • 1 turkey tenderloin, rotisserie flavored
  • 4 cups raw butternut squash, cubed or sweet potatoes
  • 1 cup wild rice, uncooked
  • 2 cups low-sodium vegetable or chicken broth
  • 16 oz fresh or frozen green beans
  • 1 cup dried cherries or craisins

Instructions

  1. If using fresh green beans, chop ends off and cut in half.

  2. Cut and peel butternut squash, cube

  3. Place turkey tenderloin in the bottom of the crock pot

  4. Add rice along the sides and pour broth over the rice

  5. Cover the tenderloin in the squash and green beans

  6. Cook on high for 3-4 hours or low for 6-8. In the final hour, mix ingredients and add dried cherries

Cooking tip: try to have the meat covered by veggies or broth. This helps prevent it from drying out. You can also use tongs to pull out the tenderloin and slice before serving or shred it with a fork as it will fall apart beautifully.

The dried fruit really make this recipe sing, so don’t skip it! It gives it the perfect balance of savory and sweet. If you’re concerned about added sugar in dried fruit, find an option without added sugar. Often, I can find craisins with “reduced added sugar” but really they don’t have any added and therefore are higher in fiber and taste more tart.
